Hi guys! In today’s blog post, I’m thrilled to share the long-guarded recipe for my sister’s not-so-secret egg rolls. These tasty treats have been a family favorite for years, combining a superior taste of flavors and textures in every bite. Let’s jump right into the step-by-step process of recreating this cherished family recipe shall we?
What do you need.
• 1 Pack egg roll wrappers
•1-2 cups Oyster sauce
• 1 cup Fresh cilantro leaves or
• Green onions (optional)
• 2lbs Ground beef
•1 bag Cellophane noodles
• 1 cup Cooking oil
• 1 Egg

Step 1: Preparing the Filling:
Begin by browning the ground beef in a skillet over medium heat until it’s thoroughly cooked. As you cook be sure to add your desired seasoning. I use Dano’s & Lawyer’s. Drain any excess grease.
Step 2: Soaking and Preparing Cellophane Noodles:
In a bowl, place the cellophane noodles and cover them with hot water. Allow them to soak for about 5-10 minutes or until they turn soft and pliable. Once ready, drain the water. (Optional) cut the noodles into manageable lengths for easier assembly.
Step 3: Mix everything:
Next you will add the tantalizing oyster sauce, finely chopped cilantro leaves, sliced green onions (if using) and cellphone noodles in a big bowl. Mix everything well to ensure the flavors meld together beautifully.
Step 3: Assembling the Egg Rolls:
Lay an egg roll wrapper on a plate, positioned like a diamond shape. Place a spoonful of the filling in the center of the wrapper, leaving ample space around the edges.
Step 4: Rolling the Egg Rolls:
Crack your egg into a bowl, take your finger and dip it in the egg yolk. Spread the yolk on the fold. Take the bottom corner of the wrapper over the filling, and then fold the left and right corners inward to create an envelope. Moisten the top corner of the wrapper again with egg yolk to help seal the egg roll tightly. Continue rolling until the egg roll is securely closed.
Step 5: Frying the Egg Rolls:
In a deep saucepan or a fryer, heat cooking oil to 350°F (175°C). Gently place the assembled egg rolls into the hot oil, being cautious not to overcrowd the pan. I like to use tongs. Fry the egg rolls in batches until they achieve a golden brown hue and a satisfying crunch on all sides. Once done, carefully remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.
Step 6: Serving and Savoring:
Now comes the most rewarding part – serving and savoring the fruits of your labor! Plate the not-so-secret egg rolls while they’re still warm and pair them with your favorite dipping sauce. We prefer to use chili sauce. But whatever sauce you use the egg rolls are certain to be a hit at any gathering or as a delightful snack for yourself and family.
